LuciferHawk included a pretty good DOF setting with the GTA V Framework preset.

I'd check that out and you can tweak the settings from there.
DOF blurs a lot of hud though so it's not perfect atm. Good for screenshots though.

that guy in the vids might be using ring dof or gp-something dof. Try out ring dof with stock settings and a blur radius of like 8 or higher and tell me if that's close to what you're looking for.

I'll get on GTA V in a bit and replicate that DOF I'm just busy doing some other stuff atm.
