There is a workaround for this: Minecraft will not delete files when configured to use a custom Java installation, so you can abuse this and simply point the custom Java option to that of the Java it ships with. In the Minecraft launcher go to "Installations", then edit yours, go to more options and point the Java executable option to <your Minecraft Launcher path>\runtime\<jre-legacy/java-runtime-beta/...>\bin\javaw.exe. After that it no longer deletes ReShade.
